Eating Healthy

Eating healthy is important for the whole family. Work and school lunches are an ideal time to get a nutrient boost.

Why not try these delicious savoury muffins with a big salad. They contribute to our daily intake of protein, fibre, good fats and vegetables.

ZUCCHINI AND QUINOA MUFFINS

Ingredients

  • ½ cup cooked quinoa (red or black makes the muffins look pretty)
  • ½ cup grated zucchini
  • ½ cup low fat grated cheese
  • 6 beaten eggs
  • Herbs of your choice (chives and parsley work well)
  • Pepper and a small amount of salt

Method

  • Combine all ingredients and pour into greased silicone muffin tins. Top with slices of tomato. Bake in a preheated, 180 degree oven for about 15 minutes or until egg is just set.

 

Remember

Aim for 5 serves of vegetables every day. One cup of salad vegetables or half a cup of cooked vegetables provides us with one of our daily serves.
